  6. Prepare 1 can of diced tomatoes.
  7. You need 1 can of crushed tomatoes (or fave pasta sauce).

  9. You need 7 oz of broken pasta noodles (about 7 lasagna noodles broken).
  10. You need 1 1/2 tsp of basil (dried).
  11. You need 1 tsp of oregano (dried).
  12. You need 1 tsp of rosemary (dried).
  13. You need 1 tsp of thyme (dried).
  14. You need 1 bunch of parsley (chopped for garnish).
  15. It's 1 tsp of sugar.
  16. Prepare 1 of salt and pepper to taste.
  17. Prepare 1 of dollop of ricotta (topping).

It's easy, filling, hearty and perfect for a cold winter night. You can easily adapt this recipe to make it slow cooker friendly, simply brown the meat as directed, then place it in a crock pot with the broth, tomatoes, tomato sauce and seasonings. In a large skillet over medium heat, heat oil. Add onions and season with salt.

Lasagna Soup step by step

  1. In Dutch oven or pot, brown ground beef then drain and set aside.
  2. Add oil to pan and Sautee onion and garlic until onion translucent.
  3. Add tomato paste and cook 2 min.
  4. Add crushed tomatoes, diced tomatoes, chicken broth and season with the herbs.
  5. Add meat back to pot and stir to incorporate everything.
  6. Add your broken pasta and add the salt and pepper to taste and the sugar.
  7. Let everything come to boil then reduce heat and cook about 10 min or until pasta cooked through.
  8. Top with a dollop of ricotta and parsley! :) yum! ! (this is optional but so delish and makes it creamy).

To make lasagna soup in the crockpot, I would recommend browning the sausage and onions ahead of time. Stir in the spinach and let wilt, then serve immediately. Lasagna soup is everything you love about a classic Italian lasagna simmered in soup form. My family loves lasagna with lots of meat in it, so I used both hot sausage and ground beef in this soup. After browning the meat, I added onions, garlic, and tomatoes along with Italian Seasoning.
